High Protein Raspberry Cobbler
Ingredients:
- 1 ½ cup oats (ground in blender)
- 4 scoops ISOFEMME vanilla protein powder
- 2 cups of water
- 1 cup fresh raspberries
- 1 cup water
- ½ cup Splenda
- 2 tbsp cornstarch
Preparation:
- Preheat oven to 375°F.
- In a mixing bowl, combine oats with protein powder and gradually add water ensuring the mixture remains slightly watery and not too thick. If the mixture gets too thick, add more water until the consistency is not too watery or too thick.
- In a medium saucepan over medium-high heat mix raspberries with ½ cup of Splenda and 1 cup of water. Allow water to come to a boil. Remove 3 tbsp. of water from saucepan and place in small bowl.
- Dissolve 2 tbsp. of cornstarch in reserved liquid. Return liquid to saucepan.
- Let mixture thicken. Pour fruit mixture inside 9" baking dish. Pour oat mixture over fruits.
- Bake for 20 minutes. Remove from oven and cool for an hour before serving.
